Chef Nam - who conveys the story of NÚC through his own unique culinary inspirations and experiences. Today, we invite you to step into NÚC’s kitchen and listen to the story from Head Chef Đồng Hoàng Nam.


Chef Đồng Hoàng Nam embarked on his culinary journey in 2016 and has since become known for his refined and innovative approach to cooking. Strongly influenced by renowned French chefs such as the Pourcel Brothers, Richard Toix, and Frédéric Thevenet, Chef Nam masterfully combines their techniques with his deep understanding of Vietnamese and Asian flavors. His philosophy focuses on using high-quality ingredients to create vibrant dishes, inspiring guests about the richness of French cuisine and Vietnamese flavors.


Chef Nam’s cooking style is a seamless blend of French, European, and Mediterranean culinary traditions, infused with the vibrant flavors of Vietnam and Asia. His "out-of-the-box" approach allows him to craft innovative recipes that highlight the natural essence of each ingredient. Remarkably, Chef Nam has a special passion for fermentation techniques, deepening flavors, and connecting dishes to traditional gastronomy. Chef Nam finds inspiration in every element of his cooking, transforming simple ingredients into unexpected culinary experiences.


When asked to describe himself, Chef Nam draws from the "Sushi Philosophy" of Jiro Ono and uses three words that capture his essence: Meticulous, Passionate, and Creative. These traits define his personal and professional life, helping his pursuit of perfection in every dish he creates. His dedication to detail and constant innovation are the cornerstones of his success.


In 2020, Chef Nam reached a pivotal point in his career when he was appointed Executive Chef. This achievement marked a significant recognition of his skills and leadership within the culinary world. As an Executive Chef, he continues to evolve his craft, pushing the boundaries of creativity while maintaining an unwavering commitment to delivering exceptional dining experiences.
